Does anyone have a tried and true egg, nut, and gluten free banana bread recipe?
I'm making after-school snacks for a friend's kids and her son has gluten, egg, and nut allergies. Other after school snack ideas are welcome; I usually provide full-fat string cheese and fruit, but welcome new ideas :)
Edit: I think I sacrificed including vital information in my quest to be concise!
My friend is a hospice patient. She has terminal (obviously) bone and breast cancer. Her husband is working full time and in nursing school full time. I am not actually there to prepare the foods for the kiddos after school, so the snacks need to be something the kids can grab on their own.
I thought that, as I have overripe bananas, I could prepare a paleo baked treat for them as a break from the fruits/veggies/cheese they've been getting lately. While my friends are not paleo and have nothing against gluten-free flour blends with soy and beans in them, I wanted to give them something I feel good about providing.

Sorry, I cannot help you with banana bread but I can teach you how to make banana cookies. Not sure if it helps.
Now, the beauty of this recipe that you don't need to measure. No matter what - they will come out fine.
The only thing is - grease the baking sheet or add tons of butter/oil, because mine stuck to the sheet and it took me a long time to get them off.
How about something like this? It isn't banana bread, but I bet dates+mushy bananas, with or without any other fruit thrown in, would be great, or any other fruity filling. (I've never personally used chia seeds or whatevs so I probably wouldn't bother with that stuff unless you've already got them about the house). http://ourearthland.blogspot.ca/2012/08/simple-date-tarts-nut-free.html
I also like Paleo chicken salad sandwiches and kids think they're cute. Leftover chopped/shredded chicken, lime juice, avocado, salt and optional cilantro or jalapeno, mooshed together, served between cucumber slices or in celery logs. Bonus points if you make anything star, flower, or heart shaped with cookie cutters. :)
This isn't really banana bread, more like a chocolate mug cake:
Mash 2 smallish bananas in a microwaveable mug. I add a half tablespoon/ tablespoon of grass fed ghee as well, but I am sure you can do without. Mix in about a fourth cup of coconut flour, depending on how much banana you use. It should be a really soft shiny doughy consistency, I add 1-2 tablespoons of cocoa powder, but that's optional. Microwave 5-7 ish minutes until it is firm. I eyeball it whenever I make it, so it varies every time; you might have to experiment a bit. I hope the coconut flour is ok. Before I discovered coconut flour,I used to just use A LOT of cocoa powder to reach doughy consistency, though it came out more of a warm mousse/pudding brownie thing. It tasted delicious still.
