Tonight I made some soup for the dog. I blended a quart of gelatinized broth with a couple of eggs. It turned out nice and creamy. I was curious about how it would taste and I discovered it was quite a nice tasting pudding. I think a little bit of sweetener and this pork feet gelatin actually would make a great dessert.

So, this got me wondering. Do you have a yummy paleo "jello" dessert recipe?

i like to add a packet of gelatin to almond milk (or milk of choice... water works too), then stir in a pre-mixture of cocoa, stevia, and vanilla (mix it together separately to avoid lumps). it cools like jello, but then i'll mix or blend it to make it creamy.

also, sometimes i'll add gelatin to boiling water and then mix in some apple cider vinegar and stevia. i love the cold sweet and sour taste, especially in the summer.

but i'm a sucker for anything you can eat with a spoon, really.

Coconut milk, xantham gum, and avocado help thicken. The last has a strong flavor though that needs to be accounted for in a recipe.

Nourished kitchen has a fantastic recipe that works great with coconut milk for custard. Added bonus is that it called for bone marrow!

Ripe avocado blended with coconut milk, cocoa, vanilla and honey. Tastes just like chocolate pudding.

I just made a lovely panna cotta with cream, a little coconut palm sugar, vanilla, salt and gelatin. Then I juiced a few pomegranates and added a little more gelatin and poured it on top once the first layer had set. In individual ramekins it looks festive and tastes delicious. It is more Primal than Paleo, but nice for treat and is a pleasant way to consume gelatin.
