I get my grass fed beef from a local place called Baucom's Best. I was buying a brisket for Christmas and asked if he had any tallow. He said they have beef liver fat that's used for making soap or just plain beef fat. Isn't tallow used to make soap also? I'm wondering if the beef liver fat he's referring to is the same as tallow or should I just get the regular fat and render it myself?

Suet is kidney fat, maybe that is what the butcher meant to say. Suet/kidney fat is the stuff tallow is rendered down from. It's the perfect cooking fat (and can be used as a lubricant, for soap, for candles, etc). I'd imagine if he's got any "special" fat it is the suet (kidney fat) he's talking about. Buy it, use it!

I talked to the guy at the farmers market again this morning. He was talking about suet. They didn't have any there but I'm picking some up on Wednesday. – Dale Dec 18 2010 at 13:55

I too just bought some kidney fat (grass fed cow) and intend to bake with it. Any recipes you can suggest would be great! The butcher said kidney fat is what people buy to bake with.
