I only purchase pasture raised chicken eggs and its winter. I know I won't be able to get much more after this week. What are some good ideas for eggless breakfasts?

my new love is sausage on lettuce. pastured pork locally made with no fillers or weird ingredients! salmon and avocado for breakfast is awesome too.

I can't eat eggs. My nutritionist Amy Kubal encouraged me to think of breakfast as just another meal. Ergo, meat, veg and fat. I eat chicken, ground beef or lamb, or sausage. If you roast a chicken you can just reheat it in the morning, while you saute some veg in fat. Done.

I got in the habit of eating eggs for breakfast (usually two pastured eggs fried in butter) and had that literally almost every day for over a year. Eating a zero-carb, high protein breakfast every day for months did wonders for my metabolism and general well being. However, I love eggs but honestly I'm getting tired of it.

These days I will sometimes skip breakfast (and call it an intermittent fast) and just have coffee with whole cream, and make up the calories at lunch (doing crossfit 3-4x per week means I need to keep up with the calories). Another option is berries (which weirdly are available throughout the winter) with either cream or yogurt. I have trouble eating leftovers (i.e. steak, vegetables, etc) that I normally eat for lunch for breakfast, I need to have something easier to digest.

I find pastured pork easy to digest, easier than Jimmy Dean and similar institutional sausage products, so that is another option.

Here's a possible solution: Some may call me crazy or obsessive, but I really don't want to be without my pastured eggs so I ordered a ton from a local farm and froze them in ice-cube trays (after cracking them open first, of course). They were a complete pain to remove from the trays (and many a tray was sacrificed to the cause), but I got them out and stored them in freezer bags. I use them raw in a Vitamix drink, so I can pop them in frozen, but I have read that you can thaw them and use them as you normally would.

There is some issue with the yolks becoming gelatinous when frozen, which can be remedied, if this bothers you, by blending the egg with a pinch of salt before freezing. I didn't do this since Vitamix can turn anything into a smooth puree.

I will say that opening my chest freezer in the basement and seeing all those eggs with beautiful orange yolks is well, a joyful sight. (As long as there is no power outage. :))

Have you tried greasing the tray? A little coconut oil, olive oil, or butter might make them easier to get out. – MathGirl72 Nov 5 at 15:08

Sausages? Organic bacon? Anything meaty and with vegetables really. Leftovers make a decent breakfast too. Coconut milkshakes?

I've been doing kale sauteed in bacon fat. Sprinkle some garlic powder, salt, pepper, and cayenne on it for a little zing.

Also try picking up some cultured coconut milk from the grocery store. It's a little high in sugar (around 14g if you get the vanilla flavor) but it's quick, easy, portable, and non-dairy. Trader Joe's has the best tasting IMHO.
