Do you have recipes from traditional fermentation drinks, maybe like kombucha, kefir, or more exotic like primitive germanic fermented fruit ale?

Or something different from traditional and indigenous cultures?

MEAD - made from honey, (and sometimes plants added into the mix) water and wild or pet yeast. It is cited as the most ancient of fermented alcoholic drinks:

"It can be regarded as the ancestor of all fermented drinks," Maguelonne Toussaint-Samat has observed, "antedating the cultivation of the soil." (from above link)

I would call it indigenous to most of Europe, Africa and Asia and could possibly be described as a Germanic (Fruit) Ale. It is also described as 'Nectar of the Gods', 'The Elixir of Life' and 'The Brew of Poetic Inspiration'.

Just what you are looking for, in fact.

If you are serious about it, then buy this book (it is a fantastic resource) which will give you wonderful mead myths and histories, recipes from throughout the ages and advice on how to make and where to buy mead (and all kinds of other ancient and traditional brews like ale, beer and cider, which are yeast-fermented fruit and grains - some being high inebriating indeed).

If you're okay with lacto-fermentation (which uses a little liquid whey as a catalyst), my latest obsession is fermented Hindu lemonade. We're on our third batch of this stuff:

If you're going to get into fermenting on a frequent basis, I highly recommend getting an airlock of some kind. I use this one, but you can also use a balloon, fitted over the neck of your fermenting container.

P.S. I think this lemonade is infinitely easier to brew than kombucha. I love me some kombucha, but have yet to successful brew my own. :( – Kimmie Dec 18 2010 at 2:23

I know Daniel Vitalis, he is good on Elixiers and fermented Drinks. He done Mead (this germanic honey drink) and traditional Cider.
