So I started the Paleo lifestyle about 3 weeks ago. I eat only meat/fish/eggs, non-starchy veggies, and nuts/avocado, with the occasional piece of 90% dark chocolate. I eat about 60-80 grams of carbs a day, 1200-1400 calories, and I exercise following the typical plan: 1 day sprints, 2-3 days strength, lots of walking.
Previously, I had been gluten free (but still at 150 grams carbs, so this is a major change), but am trying to find something to help with my PCOS, hypothyroidism, and other auto-immune disorders, since drs and medicine don't seem to be making a difference. I also have insulin resistance.
I have cut out all grains, dairy, and legumes, and have seen no difference in weight, or even how my clothes fit. I had hoped to see some changes by now to let me know if I'm on the right track... in theory, everything sounded like this was the diet for me.
What am I doing wrong???
Your diet and exercise look good to me (about the same as what I do). Paleo is a great baseline for good health and can address lots of issues, but isn't a silver bullet. Note that some people have found that the Paleo diet decreases their thyroid activity, so you should keep that in mind, and think about eating foods that can offset that (i.e. seaweed for iodine). You might also just give the diet more time.
When I first went Paleo I went very low carb (<= 25g per day) and this really seemed to "reset" my system. At first it was like a big jolt of energy and a bunch of minor health issues cleared up. After a few months it got to be a drag, and I gradually added back more carbs, but I feel totally different now than when I started, in terms of energy, mood, sleep, digestion, as well as skin, hair, muscle soreness (now I have none), etc. You could give that a try for a while. If you feel that you are insulin resistant, going very low carb for a while could help.
With the host of issues that you list, caloric restriction might not be the best thing for you at the moment. I understand that you want to lose weight (although you don't state your current or goal, as it would cause the advice to differ based on whether you need to lose 10lbs for vanity or lose 100lbs to no longer be obese) but I think you aught to consider your health issues a higher priority at this point in time. Not to say that those things and losing weight are mutually exclusive, but I do think some prioritization is necessary.
Also, not all food that you listed is safe for everyone. You might have to toy with specific items to determine what they do for you. For instance nuts seem to be a particular thing that people feel very differently about. Please note that I'm not advocating you further restrict your dietary choices, but just that it's worth examining individual items to see how they effect you. Don't neglect things like diary if you do well on them. Everyone is different.
If you'd like more targeted advice, you could provide some more specifics about you, your issues, and your goals. Otherwise, I'd say it's only been three weeks. Be patient, and believe in the fact that you're on the right track to better health.
Are you eating much fat? It's a mistake to limit fat, it helps revv up your metabolism to control appetite and burn body fat.
You may need to bring your carbs lower with PCOS/Insulin resistance. Try to bring them down gradually to see if that gets the weight off. VLC is usually required--20 to 30 grams net or less. Replace those carbs with fat!
