I have been searching in vain for actual nutritional information regarding lacto-fermented foods, particularly white rice. I've come across many claims about how much more nutritious the foods are and that at least some of the starch is consumed by the bacteria, but no actual break-downs.

I am a pregnant, T2 diabetic eating just enough carbs to stay out of ketosis, but tiring of sweet and white potatoes. I do eat fruit once or twice a week (occasionally persimmons, mostly oranges, pomelos, and apples), but am looking for other options.

Does anyone have any idea where I can find such information?

MK-4 ad MK-7 (forms of K2) usually aren't assayed (not required for labeling) but cronometer.com has several databases which it queries and might help you with some food. If you are attempting to fully activate MGP's keep in mind there is no known upper limit for MK-4. Make sure the calcium goes where the body needs it!
