I learned of paleo after joining Commonwealth Crossfit. It was a 30 day challenge. At first it was grueling but after a week I started feeling great. I decided that this was for me. As a novice, I avoided baking because I wasn't sure what or how to bake the paleo way. After months of dessert deprivation, I craved a sweet treat. I went on Lonnie and looked up different paleo chocolate chip cookies. I tried three recipes and every time they come out like CRAP!!!! I'm so desperate. I'm at a across road. I either say goodbye to my sweets life or learn how to bake paleo style. Anyone have any suggestions???
Did they use coconut flour? Because I'm yet to have a coconut flour recipe turn out good. That stuff is tricky to get right.
Use almond flour, get some very high quality chocolate chips (organic, dark chocolate -- expensive, but worth it), and use maple syrup for the sweetener.
Try a few recipes, just make small batches till you find one you like.
Try my recipe.....I think these taste great and apparently so do all my nonPaleo friends.
2 cups almond flour 6 Tablespoons coconut palm sugar 1/2 tsp baking soda 1/2 tsp salt 1/2 cup melted butter 1 egg 1 tablespoon vanilla
Blend the above ingredients and add a few tablespoons coconut flour if the dough seems too wet. Then add 1 cup choc. chips. I use Sunspire 65% becuase I haven't found any with a higher percentage and cutting up a choc. bar seems too messy.
Drop on a buttered baking sheet and bake at 350 degrees for 10 minutes.

Though the pumpkin ones are good even though they do use coconut flour.

Do not use coconut flour ever it tastes horrible and makes your throat feel like you just ate sand also it absorbs everything. Coconut oil is awesome and use regular semi sweet chocolate chips or else they won't be good. Also I use a combination of both honey and agave nectar to sweeten my cookies also I am not completely paleo so I do use half coconut oil and half butter it helps a lot. The cookies will always be flatter and not exactly like regular cookies but they are a good replacement when you crave anything sweet. Also extra eggs and vanilla help too.

My boyfriend is an absolute cookie freak... but being health conscious.. is desperate for a healthy version that doesnt taste 1 but healthy.
As soon as I tasted the batter for these I knew they were the ones. :) Chewy, tasty, and paleo.
