Since going Paleo, I'm no longer "backed-up"....however recently, things have been on the other side of the spectrum and I'm wondering if it's because I'm overdosing on probiotic foods. This has happened since I started making my own kombucha. I drink about 4-8 ounces in the mornings with breakfast. I also eat some homemade sauerkraut with breakfast. This didn't really happen when I was using store-bought kombucha, plus I was taking a probiotic supplement then. If I take a probiotic now, it doesn't help my situation. I know that it also doesn't help that I take 1 TBSP of Natural Calm to sleep, but that really helps me sleep (it also did not have this effect prior to drinking my own kombucha). Is it possible that I'm overdosing on probiotic foods? I'm slightly concerned that I'm not absorbing many of the nutrients I'm eating and that I could end up dehydrated.
Histamine is present in many fermented foods and too much histamine can cause some serious issues. If you have digestive issues like gluten intolerance or gluten sensitivity, the symptoms will be worse in you then they would be in people without -- tolerance varies from person to person.
Since you're now drinking your own home made kombucha, it's likely purer and stronger than the store bought stuff. This means the yeast content may also be higher. Yeast can be tougher for someone with a compromised gut to digest and will cause a similar reaction as histamines.
I would cut back on the home made kombucha, diluting it with water, and stick to small portions (1/4c fermented food of choice with dinner/lunch) and slowly add some more in paying attention to any side effects. Maybe you're ok with say kombucha and sauerkraut but not with kombucha and the probiotic. Experiment.
This makes me think of starting making water kefir. Perhaps I am not there yet but I definitely will!
Yes, it is possible to overdo probiotics and fermented foods. Let fermented food be thy medicine. And you don't want to overdose that, right?
If I were you, I would stick with Kombucha. Real food is always better. But then if you do not feel any progress in one month or feel worse, go back to probiotics. Whichever works.
you didn't explain your symptoms. what is happening now that is different before you started probiotic foods?
i seriously doubt a little kombucha and sauerkraut would hurt you but you should work up to a higher amount.
Cut back on the amount of probiotic foods you are eating, and/or spread them out through the day.
homemade kombucha and sauerkraut are going to have more probiotics than store bought stuff.
Try 2-4 oz of Kombucha in the morning, and the sauerkraut at lunch or dinner, and see how that works.

I brewed up my first batch of kefir a few days ago. Yesterday night, I drank some. This morning: diarrhea and stomach cramps.
So probably cutting back a bit isn't a bad idea. The incredible influx of bacteria can initiate such a reaction.
I would stop the kombucha for a while and just stick with the saur kraut because it sounds like things have gone downhill since adding homemade kombucha to your diet.
The body ecology diet explains that kombucha is a wild ferment made from an airborne yeast so it can cause problems if you have an undiagnosed yeast infection. it's a lot more difficult that other ferments to digest, so they don't reccommend kombucha right away. You should stick to safer and more digestable ferments until your body is ready otherwise you're going to do more dammage than good.
