If you roast the chicken whole, the skin does the job of the bacon, resulting in moist succulent breast meat. Rotisserie chicken...mmmm....ferris wheel for chickens....
Why would you eat anything without wrapping it in bacon first?! Bacon is one of those foods that goes with anything. Chicken breast, asparagus, scallops, a shot of vodka, even ice cream. Bacon-wrapped strawberries dipped in chocolate should be the new Paleo food of romance.
Of course that was mostly tongue-in-cheek humour - though those taste good, too, especially wrapped in bacon.
On a slightly more serious note, a beer-can chicken yields the most succulent breast I've ever eaten. Besides, practice nose-to-tail eating. Every part has its worth in different applications.
While I LOVE bacon....it just doesn't do it for me wrapped around other stuff. Chicken breast - yeah, it's good with lots of mayo (and no bacon). The mayo solves the "dryness" problem and has a great flavor, especially if the mayo is homemade. Chicken dark meat is great too, but not so much with mayo (just personal preference).
It's all good, as long as it's paleo!
