Expeller-pressed coconut oil is healthier and, at least on the international commodities market, cheaper than canola oil. So why don't more restaurants use it as their cooking oil of choice, particularly as its reputation for being a healthy oil is becoming more widespread among a large group of folks - not just those in the paleo community?
Like canola oil it's tasteless, but it does it affect cooking in some other way? Is it hard to buy in bulk in the United States? Help me understand!
