Think of gelatin as a base thickener. There are many traditional uses that are paleo friendly, like the gelatin topping on a pate (meat broth and gelatin).
Flavoured or even plain coconut milk with gelatin is scrumptious.

I've been drinking gelatin tea. I just sprinkle some gelatin on a little cold water to "bloom" it, then fill the cup with hot water and my tea bag. As long as you drink it hot it won't thicken but I got called away from my desk for a while and returned to solid tea. I ate it with a spoon--it was good ;o)
You don't have to eat it in its solid state to get the benefits.
