I have almost gotten breakfast down. But I need a veggie..

I put eggs (from fridge in shell) and bacon on a foil-lined cookie sheet and pop it into a cold oven which I set to 350. 30 minutes later breakfast is done.

I have it with tea and should find an veggie that works. Maybe I could put some zucchini strips on the pan with the bacon, and they would roast in the drippings?

What veggies are good in the AM and would not be much of an extra step?

EDIT: I forgot to mention I don't have a dishwasher.

This works for me now because the only cleanup is throwing the tinfoil away after the bacon fat has congealed on it and disposing of some egg shells and paper towels.

The idea of getting a pan dirty for breakfast and having to deal with it is pretty unappealing most days.

Ideally it would be something I could eat without silverware like bacon and "hardboiled" eggs:)

ok, after reading this thread all the way through im pretty shocked ive never done this with my eggs. i have hardboiled eggs almost every morning. i boil them though (like many of us im assuming). this, though, sounds awesome. im trying it for sure. – ben61820 Jan 7 2011 at 15:20

@Ben Give it a go! Just be sure to lower the temp if you are just cooking eggs. I hope you enjoy it as much as I have. I admit I don't cool them in icewater unless I am doing a huge pile, I just peel right away under running water. @Jae It sounds stupid but it is the fat, there is this pan full of yummy bacon drippings that I could cook something in if I can get the combo right. – Vrimj Jan 7 2011 at 16:29

Don't let throw away the bacon fat! Either pour it into a container to use later, lick it up (very classy), or reuse the foil and cook something else in the fat. – Nick Jan 7 2011 at 19:02

I eat spinach nearly every morning, though it probably wouldn't work in the oven as you described. I just toss it in a steamer basket and it's done in a few short minutes! Clean up is a breeze.

I put my spinach in a glass bowl and microwave for about 2 minutes, drain and add Kerrygold. Cleanup easy peazy. – Doris Jan 7 2011 at 14:37
Sometimes for dinners I bake spinach with bacon and cheese in a cast iron pan. I fry the bacon, remove and crumble the bacon, cook spinach in bacon grease with some onion, add eggs bacon and cheese and cover and cook on the stove top on low or put in the over at 350 or so for 20-30 minutes, maybe more depending on how many eggs I use. My favorite is asparagus, mushroom and garlic with eggs. I usually will have it for dinner and then the next day eat the leftovers. It is TODAY's breakfast.

Well the aspargus should work in season, but the mushrooms might make it too wet for the bacon... unless I used a roasting pan and put the veggies on the bottom – Vrimj Jan 7 2011 at 13:34

Kale might work. Through a few kale leaves on the pan with some spices and a little oil. Not sure if 30 min would be too much. Maybe add it half way through?

Kale with a little garlic is really good with morning eggs. Saute the garlic for a few minutes, then chop up and add the kale. The whole process will take about ten minutes. Enjoy!

Chopped up broccoli roasts very nicely! Sauteed spinach is great with eggs, and only takes a couple mins to make.

Bell peppers! That is if you are down with nightshades. :) So, lemme get this straight, you put eggs in the shell in the oven?? I have never heard of that. How do they come out? Like boiled eggs?

Opps forget to add that if you are gonna try it they are best at 325, I use tthe higher temp to crisp the bacon. The bacon prefers a preheated oven but the eggs can crack if they are not but in a cold one :) – Vrimj Jan 7 2011 at 13:45

I do thin cut circles of zucchini or yellow squash. I'm sure they would both roast well in the bacon drippings.

Winter squash sounds good to me right now, but it could just be the season. ;) That temp/time would be perfect for it and the bacon grease would make it yummay.

I'd roast some Brussels sprouts with it.

Thanks for the great "egg in shell" cooking lesson, by the way. It doesn't get more convenient than that. I can't wait to try it!

I did this in a pan (and it was delicious), but you could conceivably do it in the oven. I imagine it would be pretty awesome with bacon.

This morning I had 2 eggs, a slice of bacon and some peppers & onions. Colorful veggies are good for you!

I have several bags of frozen spinach and mustard greens that I also intend to eat off and on for breakfast as well.

You can put the slice of bacon in the bottom, two eggs on top and then veg on top of that and nuke it for 2 minutes. Viola - yum yum!

Instead of having to worry about cooking something, I always eat a couple of forkfuls of a lacto-fermented vegetable with my breakfast. I keep three or so different kinds in the fridge and switch them out as I see fit. Sauerkraut tastes really fantastic with bacon and eggs. Yum!

Throwing a handful of shredded coconut into the hot grease makes a tasty treat, and the fat really helps me feel energized and satisfied for the rest of the day.

Green beans maybe? I love roasted green beans, and I bet they would taste amazing roasted in bacon fat.

I'd say sauteed spinach or asparagus. Make extra for dinner then eat the leftovers!

You could try whole garlic cloves (peel the night before), chunked onion, and maybe the stems of swiss chard? Save the leaves for dinner (fantastic in a stir fry), or maybe toss in at the end and stir around in the still sizzling bacon grease.

roasted beets :) and you can make them the night before and chill them if you don't want warm beets. I like fennel and beet salad, make it at night and let it marinate in the fridge until morning. its perfect to beat the summer heat!

1 fennel bulb (sliced thinly)/ 1 beet (cooked and quartered)/ juice and zest of 1/2 a lemon/ 1 tablespoon honey or whatever sweetener you prefer/ 1 tablespoon olive oil (or whatever oil you prefer) salt and pepper. Mix and chill. Dijon Mustard also works very well in the marinade if you like that flavor.
