melt ghee with cocoa and sweetener to taste. Solidify. Better, melt cocoa butter, or mix some creamed coconut or oil with it for solidity. Not too much though. You might try with butter too as ghee might get too hard...

I've experimented blending cocoa with coconut cream and stevia for sweetness and gotten good results. Adding nuts like almond and hazelnut is also good. It's not chocolate per se but its chocolate-like and in my estimation superior.
Get a glass of dairy
Put tape on the glass
Write Chocolate (or choclate) on the tape.
Chocolate does not taste like dairy. Trying to make it taste exactly like dairy is like trying to make steak taste like chicken. Or trying to make eggs taste like an onion...
I go for raw chocolate made with variations of the following ingredients: cacao powder, dates, coconut oil, almond butter, nuts. For example, if you're going for a light, fruitcakey texture (like nakd bars), just use dates, cacao and nuts. If you like it richer, add in almond butter. Add coconut oil when it's too dry. Etc. I simply blend the ingredients in a food processor, smush into a baking tray and leave it to harden in the fridge. I use ingredients intuitively rather than measuring.
I like using hazelnuts in my mixture, because it has a chocolate association for me which affects the taste - kind of like Dairy Milk fruit and nut bars! Sometimes I eat hazelnuts on their own and it will taste like chocolate!
Wont taste like Dairy Millk but it's still pretty good!
