I recently bought some Natural Value FULL FAT (not light) Coconut Milk, the new kind without guar gum--and the ingredients are "coconut extract and water". What exactly is coconut extract?
Coconut extract on the label of coconut milk does not usually mean the coconut flavorings noted in other posts. It simply refers to a higher concentration of coconut milk (extracted from coconut meat with water/blending/filtering) that is then diluted with water. This is particularly true with Asian brands.
The only case (in coconut milk) where it MIGHT mean the flavoring, is when the label ALSO lists coconut or coconut milk.
