Because the tree in my back yard is about to put forth some fruit and frankly, it would be a crime to let the crows have them all. (Much as I honor the corvids.)
I've found almost no good ideas online for Paleo cherry treats/bars/whatevers of any kind.
I'm probably going to freeze these until I have a plan -- I'm on a fairly low carb Paleo way of life right now and gorging on luscious sun-warmed cherries is not really an option.
What would you do?

Not sure if the sugar is required, I've never actually done it myself. I think it will taste better than frozen cherries, unless you can flash-freeze them.
Or blend them with strawberries and blueberries? Or use them in a fancy grilled steak or game recipe?
This past Saturday, I marinated some steaks in crushed fresh cherries (we were camping and this was available). The steaks turned out quite tasty (I added some garlic and salt before grilling). I'll be doing it again.
It's a thought.
You could throw a "goodbye to the neighborhood/cherry gorging" party. With Laura's above mentioned steaks marinated in cherries as the centerpiece!
Or just invite neighbors to pick them when they have the time and inclination. Or take them to work to share.
But be sure to enjoy some fresh ones, too, a few with breakfast and/or lunch shouldn't have much effect on blood sugar, right?
Ask, what would Grok* and his wandering group of friends and relatives do*, if they found a cherry** or other loaded fruit tree? Than invite everyone over to do the same.
*Yeah, I come down on the Grok is a fun and amusing way of looking at paleo, and can be used as a good way of thinking about our evolutionary ancestors would have done. The point to remember in this case is that they wouldn't have found a fully loaded fruit tree every day or even week.
**Have a nice little group binge and a nap, or if they're later era Groks maybe carry the extras in a leather pouch and discover the wonders of fermented cherries, or lay the extras out to dry for later?
***Lots of sugar (unless you split it with your tribe of 50 nearest and dearest(and the competing birds (yum, dinner))), but packed full of phyto-nutrients.
You could dry them to make dried cherries (like raisins or dried cranberries) which you could keep around and just have a few once in a while, instead of gorging on them. Dried fruit keeps for months.
I'm not sure how to go about drying them, but I guess a food dehydrator would work, or a very very low heat oven, or just plain laying them out in the sun for a few days.
Boy, I wish I was your neighbor. I second the dried cherry idea. You could put them in a food dehydrator and store them for a few months. The dried cherries would be great mixed into some home-made trail mix (cherries, almonds, cashews, etc.) or sprinkled on a salad.
I am not sure how sweet your cherries are. Sour cherry juice is really helpful for reducing inflammation. An ounce or two a day usually does the trick. You could also cook some cherry juice down into a syrup reduction and keep it in the fridge. The syrup could be used in sauces, marinades, and dressings in place of honey or stevia. Another idea is to use a little cherry syrup concentrate mixed with seltzer water and lime for a paleo "cherry limeade."
I wouldn't gorge myself (dire digestive issues if I did! :X), but I think a dozen or so per morning would be allowable within the Grok context. With the rest, drying is an excellent suggestion, or if you are community conscious, try asking your local food bank or church if they could distribute them.
