I dont understand why but anytime I east beef, I have some of the worst smelling Gas. I dont know if this is a digestion issue or what. It also seems to take at least two days to process through and exit.

For me, paleoprimal leads to almost no gas whatsoever. Im strict with no dairy and no starch, even no starchy veg like tubers. By eating only meat (mostly beef, chicken, and fish) and green veg i am pretty much gas-free.
I have to posit that the gas is from a sidedish, or whatever youre eating with the beef.
Although, you may want to really pay attention to how you chew. I learned this years ago - that many of us in the modern day world just do not chew enough. Chew everything you eat until its pretty much liquid, only then swallow. I find that it takes a good burden off of the body's inner digestion. Masticate man!
Having come to the Paleo diet from having very bad digestive issues - I can relate. How long have you been on the diet? How strict are you? It took months for my gut to heal and balance itself. Funny enough, I rarely EVER get gas now. My diet regularly includes fermented foods and I do try to keep things balanced for the most part. I find that if I eat "off" slightly - meaning a weekend away from home when I might eat corn/grain fed beef, crappy factory farmed eggs, more fruit, a badly balanced fat intake, etc. - then I tend to get gassy again all of a sudden and experience some other issues as well.
