My wife has recently begun eating only the whites of the eggs, and I prefer to eat the whole egg. I think they're yummy, I dig the nutrients, and I don't want to see food go to waste. So, we'll have all these yolks saved, and I'd like to find a good, simple way to use them that my meager culinary skills can handle. Any suggestions? Thanks!

I add them to my ground beef with some salt, pepper, cayenne and tumeric. Cooked in butter... Delicious. |

custard! if you google "paleo custard recipes", about a million come up. i like to make them in ramekins the night before and have them in the fridge for a fast breakfast. also a good way to get some eggs into my picky kiddos and some protein into my vegetarian husband in the morning. |

just whites with no yolks leads to biotin deficiency, if your wife insists on leaving out the biotin(found in yolk), please have her get it elsewhere, whether its supplementation or not. Compounds in egg white impede the bodys biotin. Tell her Biotin is important for Hair, Skin, Nails... maybe you can get her to eat the whole egg. PLUS, The Egg Yolk is ridiculously good for you. from Hormonal Balance, to Minerals and Vitamins including the elusive K. Eggs Yolks are like eating Liver, for people who won't eat liver. I love egg yolks lightly Cooked in butter, pretty simple... Roll them around in the butter to cook the outside but keep the centers runny. :) |

i blend them with olive oil for mayonnaise. then i add horseradish mustard for horsey sauce and heap it onto roast beef. im such a paleo pig. |

Avgolemono, greek lemon soup. Absolutely delicious ( especially when made on good natural broth ). I modified it a beat and except for standard ingredients I add some coriander, cinnamon, either fresh dill or parsley and some coconut oil. Some recipes call for using whole eggs, but I prefer to use more yolks instead of whites. |

Just chug em down! Raw egg yolks will deliver the biotin in full. Otherwise throw them into a steak tartare. Stephen is on the money here, egg whites are the bit you throw away, not the other way around. DON'T eat raw eggs WHOLE - the raw egg white destroys the biotin in the yolk. This another reason never to scramble your eggs. I separate my eggs, have some of the yolks raw - then cook the whites (fry them with shallots and hot pepper sauce), adding one or two raw yolks at the end. |
