What cures have you seen by eliminating grains and or diary from your diet?
How long did it take you to see results? How did you know it was these foods making you ill? Did you keep a food journal?
Here is a list of some of the problems/diseases associated with these foods that might be making our lives miserable.

my sinuses cleared up significantly. Pretty awesome side effect! I used to spend most of the fall/winter/spring with head colds and sinus infections, and have only had 1 since quitting wheat (and that was brought on by high stress levels and too much corn I think). Oh, and my stomach is way happier
Eliminating gluten eliminated the constant heartburn and bloating I had. I saw the results within the first two weeks. Now if I am glutened, even in very small doses, I feel full immediately (like I ate a 3 course meal) and have to eat several doses of antacids just to calm my stomach.
Eliminating grains and starchy foods in general also gave me far more control over my glucose levels than the typical CW diabetic diet and medication.
Edited: I just remembered another fantastic result: it eliminated my issues with water retention! I used to wake up every morning with sausage fingers and would have to drink a giant glass of water to get the fluids moving. No more! I can actually bend my fingers first thing in the morning without feeling like they are going to explode.
Nothing from elimination. But I had quantitative improvements from reduction, most directly on A1C inflammation (from 8 to below 6), blood glucose (from 200 to 90-100 fasting) and triglycerides (to mid 60's). Part of this was also due to weight loss, but the blood glucose improvements were almost immediate.
I no longer have to take meds for my arthritis (diagnosed 12 years ago). I no longer have any heartburn. I sleep better, have more energy, and have a clearer mind. I wish I'd learned about Paleo/Primal decades ago!
My mom saw really dramatic reduction in her inflammatory arthritis pain from just cutting gluten and dairy. She can also take NSAIDs now without horrible stomach pain (although she still generally avoids them). She's also been able to get off of Zoloft and Wellbutrin without the fall into depression that always followed her previous attempts at stopping them. She still has a long way to go health-wise - I'm trying to get her to transition to full paleo, plus improve her sleep, manage stress, etc. But. Just eliminating gluten and dairy has helped her so much it's incredible. I guess I'm preaching to the choir on this site, but I really think eliminating gluten is worth trying for pretty much everyone. There's nothing to lose and a world to gain.
As for myself, I eliminated all processed foods, grains (except for very occasional white rice) and legumes along with gluten and dairy, so it's hard to know what to attribute my health improvements to. But since going paleo, I've been able to stop the three (three!) antidepressants I was on (Wellbutrin, Cymbalta, and Prozac) without falling back into my deep dysthymic rut. My skin has been perfect (previously needed to take birth control for mild acne). And my constipation is gone. Not too shabby.
But really, my mom's arthritis and depression improvements, just from cutting gluten and dairy, are really, really amazing.
