I typically am up at 5am and on the go until I get home around 10pm. I'd love to go strictly paleo, but I've been having issues coming up with paleo recipes 'on the go'. What I'd really like is something I can make on Sunday for the whole week that I can both eat in the car on the way to work and eat at work... Breakfast AND lunch. I tend to more simple meals, but eating beef jerky and an apple for breakfast is getting a little boring...
canned meats like canned salmon, sardines, canned cod liver (never seen this, but heard about it), are definately things you can keep in your car or at work forever until you need them
As for taking stuff for the day, hard boiled eggs and nuts tend to be a good option. You can also make some good "power bars" at home, by throwing some nuts, coconut oil, cinnamon, cocoa nibs, chia seeds, etc. into a food processor. Basically you are making your own lara bars but without the dates
Honestly though, I have just gotten used to eating cold food. It doesnt bother me that much, and with certain things I like it better. I usually take last nights leftovers for lunch.
My go-to meal when I'm not interested in cooking much is pretty simple. I call it Jobalaya because it's a little like Jambalaya but without the rice and because I'm a putz.
Take a pound of ground meat. I use grass fed beef or bison, pork works too. Dice up garlic, onions, and ginger root and toss them into a frying pan. Let em sweat for a bit and then toss in the meat and season to taste. I typically use cayenne power, garlic powder, black pepper, coriander, crushed red peppers, thyme, and a little bit of cinnamon. Brown the meat and let the fat stay in the pan. Then I add some tomato sauce (use homemade or from a glass jar, canned sauce can have BPA leech out) and then you add whatever veggies you want. Best part is that you can use either fresh or frozen because it's all mess anyway. Typically, I'll dice up tomatoes if I have them and toss in frozen peppers, broccoli, artichoke hearts, and whatever veggies are in season or available. The best part is that you use what you have or what is on sale at the market. I tend to use carrots and avocados and mushrooms a lot as well. Whatever you like, toss in. Takes about 1/2 hour total and depending on the amount of veggies you use, you can stretch a pound of ground meat into 3-4 meals. I do manual labor and need the extra protein so I tend to get 2 meals out of it and have massive bowls to eat for lunch.Hope that helps.
Have you seen the little fry pans that are perfect for cooking 1 or 2 eggs? That stupid pan had made my life easier! On Sunday I brown sausage, carmelize onions, sautee spinach, and cook sliced mushrooms. Then in the morning when I'm in a hurry I fill the little pan with any combo of the above, whip up a couple eggs, and make a mini frittata. You can make them the night before and eat them cold too if you're really that busy, but it takes 3 minutes! Add fresh tomatoes or peppers...add whatever you like! I throw it in some foil and eat it like a pocket in the car. I'll try to post a pic.
I cook a free range chicken on sundays with or without a bunch of veges. Shredded for lunch with red pepper slices, and a small avocado. Grapes, cherries, fresh fruit in season transport well. I also make stuffed peppers that travel well. Soups can go in a thermos, hot or cold...nuts are good to have on hand.
My schedule it not quite as extreme (5:30 AM to 7:30 PM), but I do eat 2-3 meals at work. Lunch is easiest for me. I cook some meat in the crock pot with onion, leek, or other such vege, and bring that in a thermal container. I have access to a microwave, so I heat my lunch.
Breakfast is tougher for me--creativity seems minimal at the moment. Lately, I've been having a cup of coconut milk with 1-2 scoops of whey isolate and a tablespoon of cocoa for breakfast. Not the best, but it works and is yummy. In the past, I did salads for lunch, but tired of them and found that my digestive tract prefers cooked foods for now.
I rarely eat dinner, but when I do, it's similar to lunch and I eat it at work as well: 7:30 is just too late for me to eat and then sleep.
I'd be interested in what folks do for breakfast besides the typical eggs and meat fare.
Here's something I whipped up the other day for lunch at work. It'll last me all week. The coconut milk did set pretty firmly and it's more like a terrine or mousse than a fish salad. Has to be kept in the fridge, though. Tasty? Well, not being a huge fan of fish in general, the curry paste helps mask it some, but it's not like I have to force it down and it's about the only way I'll ever eat canned salmon or sardines.
Can't help you with breakfast as I rarely eat it, but maybe some coconut-flour pancakes used as a wrap for eggs and bacon or sausage, freeze & nuke?
