I have come to the realization my body does not like fiber and/or starch. Yesterday I ate some spaghetti squash and celery root-- my stomach was so bloated and I was in such pain for the entire day. I have tried digestive enzymes and HCL nothing works. Also tried fermented veggies-- same thing. Can you name some lower fiber veggies?

I think that you may have suffered the bloating just by eating the spaggethi and could not be related at all to the other stuff. It happened with me also. I now eat all the greens that Pecan told you plus the leafy greens (broccoli, Brussels sprouts, cauliflower) with no problems, even the fermented ones.
I really think that for bloating issues staying away from grains is king, specially gluten but most of them really. But of course, this is pretty individual and depends on your personal food sensitivities. As Dragonfly told you, you should do trial and error (well you're currently doing as can be seen in the question) but I'd keep a close eye with grains. I also noticed that gut issues dissipated completely when I started to get lower from 200 gr carbs a day (OK now on Paleo it seems huge but there was a time when on low fat - high carbs kind of mentality it seemed more or less normal specially when you're engaged in bodybuilding or endurance training CW).
Some more insight: how is you emotional life going? I've had the most troubles with bloating when severely under psychological stress (like tearing appart with ex-girlfriends or pressure at work) and when staying passive (doing less exercise, etc) and then succumbing to cravings (because of the stress induced) and indulging on sugary things.
