I have a big box of Meyer lemons from Costco that I purchased without a game plan. Any paleo-friendly ideas for how I should use these before they go bad?

This is my first time trying them. I imagined they'd be a bit sweeter from what I'd heard.

I was thinking maybe lemonade with a bit of honey. Open to suggestions... lots of lemons here.

oh god! salt-preserve them! they are incredible! i make two quarts a year and use them in everything. PERFECTLY amazing flavor, like nothing else. one of my favorite things ever is chicken tangine (obvi without couscous) with preserved lemons and olives. please please please do it. meyer lemons are so special- dont waste that rind and zest! plus, they are sp pretty and make beautiful gifts.

i was going to go with the freezing but this sounds pretty great. your enthusiasm and the instructions link are helpful! the lemons are already starting to get soft and squishy but should still be good i suppose. i'll buy a jar or two tomorrow. – rafi Jan 24 2011 at 2:50

Juice them, freeze the juice in ice cube trays, then store the cubes in a ziplock bag in the freezer. We put the cubes in water or thaw them and use in recipes.

Pickle them. A few minutes with Google will give you hundreds of variations to work with. Whole chicken stewed with oil cured olives and salt cured lemons will change the way you think about chicken for the rest of your life.

I wish I had the exact recipe. Google turns up quite a few variations. The version I had was stewed in a clay tajine. The chicken was whole, and stewed only in its own juices. I'm sure saffron was involved. Maybe I can fake the clay tajine with terra cotta flower pots. I'll have to work on this. – Keith Jan 25 2011 at 4:34

Meyer Lemons are good for lemon meringue pie - I found a couple Paleo recipes online:
