I live in Panama city, central america and over here i've called around local supermarkets. It turns out that the majority of produce is fed a mix of grass and grain (grass during the day and grain at night). The majority are free range and not stabled up, I know the grain is bad but this is not as bad as a solely grain diet. What are your thoughts on this and should I discard the fat or eat it?

cows fed a mixture, are grain fed. They do not have the Advantageous Omega 3 profile, CLA, K2 etc.
Toxins are stored in fats. Grain fed animals, are bad sources of fat.
Grassfed/Grassfinished Meat, eat the fat.
Grainfed at all, eat just the lean, and eat other fat sources for your K2/Omegas. Fish, Quality Eggs etc.

in the US, meat that is labeled as "grass fed" is only required to be grass fed during a what amounts to a few months of their life. in fact, they are almost without exception "finished" with grain to fatten them for market for the last few months of their life. you need to ask when buying from a butcher if the meat is grass fed AND grass finished. personally, i wont pay extra for much grass fed meat. i do have access to grass fed and finished meat, so i eat the fattier cuts of that, and otherwise buy meat from a local (wonderful) farm that irritatingly grain feeds. (we live in a salt marsh- theres no shortage of hay around here.) ill eat the lean cuts of the grain fed meat.
Maybe you could find goat or lamb/mutton. It seems far less likely that they would be fed grain. The only meat I eat is in the form of fatty cuts of lamb that are sold as grass-fed, but in a pinch I would probably eat standard lamb and most likely get a similar product.
It sounds to me like the beef in Panama is similar to what existed in the US before meg-corporate feed-lot production took over. The animals pastured during the day on natural forage, and then received supplemental grains to help them put on weight and taste better.
My first preference would be completely grass-fed, but if it was not available, I would consider the mixed grain/grass option viable and still a major improvement over the feed-lot beef sold in the US today.
I live in MN. We eat a lot of vension (wild deer). However, in agriculuture country, the wild deer do eat some grains and as a result they crow bigger/stronger and have a higher fat content. However, I would still consider it to be a major improvement over feed-lot beef.
A ruminant fed a mix of grass & grains can maintain good overall health without being pumped full of antibiotics. The same can not be said for a 100% grain feed ruminant in a food-lot.
All I can say is that the best steak I have ever eaten was from Gaucho's in Panama City.
From the appearance of the steak they brought around before ordering, they looked tremendously healthier than anything I've ever seen in the States. I think the abundance of quality grass year round has something to do with it.
I just wanna point out.- Panama.
This is tropics. There you have different climate, different plants, different grains, different animals.
I suggest you go for local fruits, plants and and of course fish.
Farming cow is sometimes and often brought by by colonisation. You know, really look what you can get.
What kind of grain do they get? Is it genetic modified grain. Or is it local grain out of a permaculture garden. Traditional grown.
Panama isnt the Us. Alot US citizen have not left their country and not well with geographics. Just see Your are in a different country with a different culture. Look for your local diets. What are tradtional diets eaten. And let guide you by that. So you can adjust a Panamapeleo style.
