You have to be a dog (or a laboratory animal) for your liver enzymes to be raised from eating xylitol. Are you a dog?
High liver enzymes are generated via cell death, normally liver cells, but heavy exercise over long periods of time can raise some of the enzymes for obvious reasons. This is in humans.
