I like vegetables because they always add something to a dish and without them you wouldnt be able to hit your daily vitmains/minerals.
So how much do you eat per day on average as i dont want to eat too much like kale (where i get thyroid problems) or spinach (oxalic acid).
Its like every food has a problem with it and it makes it more difficult to choose espically since im prone to acne and other health problems!

I usually eat 1 cup a day of cooked veggies. my go-to is a mixture of zucchini, mushrooms, carrots, and onions cooked in bacon fat with a dash of turmeric. i sometimes add a handful of baby spinach in there if i have it, but i don't include any raw veggies or greens in my diet.
i basically eat the veggies for flavor and added texture in my meat dishes. i don't see a point to eat any more since that just makes my bowel movements bigger and i like small ones.
Anecdotes of people OD'ing on vegetable-derived nutrients are few and far between. I eat as much veg as I can afford or until I feel full, whichever comes first. Mostly cooked, some raw. Of course, your mileage will vary; I suggest trial and error to determine the optimal vegetable plan for your body. There's nothing resembling a concrete answer.
I personally feel like you can't have too many vegetables but that's just how my body responds to them... My dad actually had problems with his back (because of oxalic acid) after eating 2 bins of spinach a week for a few months. Do you shove nutrients off your plate with veggies? If so, just eat the rest of your meal first and then have as many vegetables as you'd like!
