Hi guys, here's a bit of a fun one. What's your favorite paleo comfort food? Comfort foods generally tend to be, well, not paleo (e.g. chicken noodle soup, toast, crackers). Mine, once the weather cools down, is chicken vegetable soup.
So what are yours?
I just made "breaded" and fried Chicken Fingers for dinner with some home made paleo bbq sauce(from sonofgrok.com) and some home made guacamole on the side. I took a little more than a # of chix breast and cut it into finger sized pieces then in 3 bowls, us some coconut flour mixed with a little cayanne peper an celtic sea salt (if you use it) one with like 3 eggs beat and one with shredded, unsweetened coconut. dredged in the flour then egg then coconut. Large pan with coconut oil, golden on eiher side and WHAMMO... Amazing!
Honestly, my new- and surprising to me- comfort food is... lamb stew. And big chunks of purple cabbage, dipped in some kind of salad dressing. And a raw carrot. Weird, because cupcakes and scones used to be my comfort food. Seriously.
My ultimate comfort food lately is an apple omelet with side of bacon.You fill the omelet with cream cheese or mascarpone and tart apples sauteed in butter and cinnamon. I pour melted butter with a touch of honey whisked in on top. It's only a little sweet if you use tart apples, and it's definitely a treat.
bacon!!! and really good salami with a glass of red wine. yum. last week i made a pot of gumbo the way my mom used to make it without the roux. so delicious, okra, shrimp, lingusia, and chicken wings. so good. roasted rack of lamb is pretty damn good too. i remember really not liking lamb as a kid, but now its definitely my favorite. the lamb has so much flavor it makes steak taste boring.
Watermelon, Steamed Kale with butter, Gala Apples(the best type of apples hands down) These have all been my new junk food.
I usually buy whatever fruits and vegetables that are less than $1.30/lb and that's what constitutes my diet for that week(also throw in cheap cuts of meat and free-range eggs)
I have a hard time putting together good tasting meals. I cooked some onions and sunnyside up eggs just now, and man it was mediocre tasting.
