If I'd like to add sources of carb in my diet while focusing on limiting fructose, what would be the best choices?
Any charts out there comparing the different fruits and tubers in terms of fructose content?
I hear a lot about roots and tubers being a better choice than fruits (fructose-wise), but as I see it, carrots and beets still seem quite high in fructose.

Although fructose is associated with fruit, it is not only found in fruit. Carrots have the same fructose/glucose ratio as bananas, and sweet potatoes have the same fructose/glucose ratio as peaches. Can you believe it?
I just can't see why fructose would be bad. Yes, highly domesticated fruit like apples and pears have the highest levels of fructose. But the truth is, there are many fruits in the wild that are naturally sweet. Perhaps there is some what of a bias because whoever out there is tasting the wild fruit to comment on it, isn't eating it when it's ripe. Many fruits exude a fruity smell when ripe, or change color. No doubt it would not be hard for our Paleolithic ancestors to tell the difference.
I think the main thing that I would say is important is not eating underripe fruit. I find that underripe fruit, while it has a tolerable taste,gives me a very bad feeling in my teeth, especially my lower front teeth. I have read about dental health being damaged by underripe fruit. I think it maybe has to do with it being acidic or something. On that note it might be best to avoid acidic fruit like oranges most of the time in favor of others.
lol, I'm not as much of an expert as I like to make myself sound. It makes sense to me though.
I personally think fructose is fine in moderate natural amounts. I think the prob is that most people eating sad are eating 10 times more of it than is natural, thanx to sodas, cake, candies, fruit juice, etc. Plus they are eating it in concentrated form in things that have no other nutrients. SO even after all that calorie intake, they are still nutrient deprived.
