I think you are seeing good advice that seems to contradict but actually doesn't. If you are going sorta low, but it's not an emergency, I agree some potato or fruit would be a healthy addition and then keep an eye on yourself to make sure it is working. But if you are very low, dropping fast, or feeling shaky, ie potentially an emergency, then it's time to pound down some pure glucose tabs or something very very sugary, like sugary drinks, table sugar, etc. You want to go straight for the big guns if it's getting dangerous because going too low if far more dangerous than a few doses of sugar will ever be. Once you get yourself sorted out and balanced on the healthier diet and lessened medication, then you probably won't have to worry as much as you will get a routine down again. But if you are taking insulin, my advice would be to always have a few glucose tabs on you just in case. With any luck, they will just sit there unused, but sugar doesn't go bad so that's just fine!
