Is all cocoa powder alkalinized? I think this process removes the fat. Does pure natural cocoa powder exist with full fat or is this an oxymoron?
Cocoa powder is cocoa nibs with the fat(in this case stearic acid, which is a very healthy fat so you should consider eating just chocolate) pressed out mechanically. Alkalized cocoa powder is treated with an acidic substance(usually sodium bicarbonate) that makes it less bitter but also kills the antioxidants and maybe some of nutrients(but I'm not completly sure). To answer your question, all cocoa powder is pretty low in fat, and the alkalization process only removes the antioxidants and some minerals
