Dried Coconut vs Coconut Oil? Is dried UNSWEETENED coconut considered a carb? I would assume it has the same MCT properties as coconut oil but just not as concentrated?

Something to watch out for if you get dried coconut from the grocery store is that it often contains a preservative, such as sulfur dioxide. – Phoenix Feb 9 2011 at 21:01
Nope the brand I bought was organic with no perservatives – KL Feb 9 2011 at 22:01

Is dried UNSWEETENED coconut considered a carb?

By calories, this food contains approximately:

  • 4 percent protein

  • 4 percent carb

  • 92 percent fat

In other words, this food consists mostly of fat, but also a small amount of carbs and a small amount of protein.

I would assume it has the same MCT properties as coconut oil but just not as concentrated?

They contain the same medium chain triglycerides (MCT). Coconut oil contains more of them but the difference isn't that great.

100 calories of coconut oil contain:

  • 0.87 g of C8:0 (caprylic acid)

  • 0.70 g of C10:0 (capric acid)

100 calories of dried coconut contain:

  • 0.68 g of C8:0 (caprylic acid)

  • 0.54 g of C10:0 (capric acid)

Better for what purpose? If you want to avoid carbs for some reason, then oil is better. Oil doesn't have any carbs or protein in it. It's pure fat. – Rob from ketocure.com Feb 10 2011 at 3:00
If you're trying to get the most MCT with the least extra calories, you want MCT oil, not either of these foods. But MCT oil is an industrial refined product. It's not paleo. (Coconut oil probably isn't paleo either but it's more natural.) – Rob from ketocure.com Feb 10 2011 at 5:37

I suspect that some people may be sensitive to the additives in some canned coconut milk. I buy frozen coconut milk with no additives. I've not experienced any symptoms from coconut oil. I have had bad reactions to coconut ice cream. I think that had guar gum in it and that may have been the problem. I actually got vertigo shortly after eating it and then loose bowels.

Please help me find frozen coconut milk. I consume canned like it is going out of style, but would love higher quality stuff. I live in atlanta. Oh and in answer to this question, you can injest unlimited amounts of raw coconut. It is about he dame as sosonut oil but plus fiber and stuff.

Make your own coconut milk. I have not done it yet but will be experimenting Thursday if I have time. I buy shredded coconut on amazon for a measly 10 cents per serving which gives you 110 calories.

This is the cheapest paleo food I consume! One of the reviews states 2 ways on how to make homemade coconut milk from the shredded coconut. I will be trying the stove top method. All you need is shredded coconut and hot water! You can make a coconut cream too.

I've made coconut milk following the video demo at Tropical Traditions. If your only blender is a cheapie you got as a wedding gift many years ago, it's not going to be up to the task of full-time coconut milk production. My own would get hot enough I could smell the insulation on the motor wires off-gassing. – PortlandAllan Feb 10 2011 at 6:14

Lucy, I had the same problem with coconut ice cream, but turns out thats how I react to agave nectar. I can't find any coconut ice cream w/o agave though. -mamameredith
