Inspired by an old post about whether people should eat Kind Bars (the answers is no, not really) I thought perhaps some people here have some hacks for Paleo-style energy bars for snacks and on the go meals. I am generally a meat and potatoes paleo with a jerky/nut/coffee type of on-the-run style, but perhaps there are some fun 'bar' recipes out there?

One Jar of Almond butter (Blue diamond spreadable works best, other brands drain the oil)

Raisins (sparsly used)

1 cup of egg whites or 3 eggs.

2 Tablespoons of shredded coconut

Mix and Bake. It will seem like it won't mix originally but it will. Spread in glass cookware. Bake at 325ish about 10 minutes or so.

What does Blue Diamond add to the almond butter to keep the oil emulsified? I won't touch their nut snack packs - they're usually drenched in canola/cottonseed/peanut/sunflower oil. Even their dry roasted almonds (at least the flavored ones) have crappy additives like sugar and goodness knows what else. – Casey Feb 10 2011 at 18:56

I make a quick fudge type snack out of coconut(milk,oil and flaked) and raw cocoa.You can add whatever nuts or dried fruits you want to it.Almonds and unsweetened natural banana chips are what I use when I'm feeling frisky

Two tablespoons each coconut oil,coconut milk 1/4 cup flaked unsweet coconut 1/4 cup cocoa heat cocoa and oil together,add very cold coconut milk. (Consistency should be that of a thick fudge..adjust your ingredients accordingly)Then mix in coconut flakes and your other add ins as desired.Put on wax paper and cool.It's a good quick bite to get you through the afternoon.

Am I the only one who read this and thought "Meatloaf + Bacon". Just kidding, but the above answer is probably your best bet :)

I just created some custom bars the other day at youbars.com; I haven't gotten them yet, but they are "guaranteed delicious!" They were pricey, so I probably won't get them often. I made a Pumpkin Spice one with dates (I requested they use half the regular amount), almond butter, pumpkin seeds, pecans, cinnamon, ginger, a little honey, and whey protein. If you're feeling lazy and have some extra cash laying around, it may be a good way to go! ;)

Yeah, def true about the dates! I'm not a big fruit eater so I don't sweat havin em once a week or so. The YouBars turned out pretty good! My only issue is if I do the pumpkin spice recipe again, I'll ask for "more nuts" and extra cinnamon and ginger; I found it a little bland. Mine ended up with about half the sugar as a Larabar, and I made the boyfriend another bar for valentines day; hopefully he likes it! – Jules K Feb 11 2011 at 21:30

At the risk of sounding like a mean old curmudgeon (truly, I don't mean it that way), I have had more misery generated by "fun" foods than any other single source of pain in my entire life.

haha, sorry i will keep the fun down over here. contrary to popular belief tho, paleo can be fun! most of the fun bars involve squats and deadlifts tho. – MikeD Feb 10 2011 at 20:32

I think paleo is a tremendous amount of fun. I have tons of fun thinking about all the processed, artificially colored, flavored and sugar-laden garbage that I'm not spending my hard-earned money on. Every time I pass all the aisles full of processed grain without buying a single thing, I am having fun. 2-3 tbsp raw sprouted sunflower seeds
2-3 tbsp raw sprouted pumpkin seeds
2-3 tbsp raw sprouted flax seeds
2-3 tbsp raw sprouted chia seeds
2-3 tbsp almond butter 2 tbsp coconut oil
6 dates (amount will vary on size and type of dates)
1-2 tsp raw honey (less if I want them as a snack, more if they're for bike rides)

put it all in a food processor and grind it up til its quite fine. It should be a bit moist. if its too dry add coconut oil, almond butter, or honey. Then put on wax paper on a plate and then cover with wax paper. knead it a bit and flatten with the back of a spatula or whatever. put in the fridge overnight and in the morning you can cut them into squares.
