I just cooked up some rainbow swiss chard by taking a slice of bacon and frying it in the pot first and then throwing the shredded chard in after it letting the steam and heat from the bacon grease coat and wilt the greens. Veggies are made better with fat and if you are living without butter, bacon grease is one go to.

One word: Lardons!! Basically fried cubes of bacon fat - of French culinary origin - SO flavorful. Adds a lot of dimension to dishes like coq au vin OR just a plain ol' salad.
Someone brought a delicious appetizer to one of our paleo parties once: Dates, stuffed with a pecan, and wrapped in bacon - then sauteed to cook the bacon.
They were unreal.

Bacon adds some flavor to a Mexican-style seafood soup my mother makes that I have adapted to be paleo-esque. Cabbage, carrot, zucchini, onion, jalapeno (I leave the veins and seeds in for the kick), a bit of garlic, celery, and tomato are chopped and sauteed in bacon fat.
You then add the bacon fat sauteed veggies to a stock pot of chicken broth (or beef or pork) add oregano, pepper, and a can of a spicy tomato sauce available in California called Pato Sauce. Allow to simmer. Add shrimp, fish, other shellfish and cook briefly.
A spicy seafood soup, that bacon fat brings together. Serve with wedges of lime.
Bacon Salad Dressing
Another hack from the lunch I am eating right now-
Fry a few strips of bacon - I used 3.
Mix grease with a bit of balsamic vinegar, finely chopped clove of garlic, a dash of honey (if you want/can handle/are ok with its use), salt and pepper--stir is up, shake it up. (Proportions are probably 2:1 grease to vinegar.)
Fill a bowl with salad greens, some sliced carrots, top with bacon, pour over the bacon balsamic salad dressing.
The warm dressing will wilt the greens a little which I like for digestive aid.
I like to make small chicken breasts on the grill wrapped in bacon. '
Heat the grill up to medium heat so that it is nice and hot when you put the chicken on. Then Take any high quality bacon and wrap it around your favorite chicken breasts. Put the chicken on a plate and let it rest for 2 minutes and then enjoy!
Another favorite i make along side this is just grilled bacon which is amazing in it's own right. I just can't believe the flavor.
Bacon is really delicious with fruits:
Fried bacon and (cold) cantaloupe
Fried bacon and some fried fruits (apple, pear, banana are great) (bonus: add shredded coconut and some nuts)
Of course it depends on the amount of fruit and carbs you want to eat.
