So I've been relatively successful staying paleo while in Oman, but I think my biggest problem is getting enough fat. I'm hungry a great deal of the time. I tried buying coconut oil but all the brands are in plastic bottles and the oil tastes like plastic. Pork products are not available here. Also, I'm trying to loose body fat. I'm working as an adventure guide so I'm not always able to eat things that need refrigerating for snacks or lunch.
Here are a few of the things I eat:
breakfast: fried or scrambled eggs, sometimes with some sort of meat like steak cooked with ghee
lunch: tuna with lettuce/spinach or chicken curry (with veggies) or chicken chili (with veggies)
snacks: nuts (limited intake) baby bell cheese (I know not optimal) baby carrots hard boiled eggs
dinner: whole roasted chicken or steak with veggies or tuna cakes (made with almond flour) and home made paleo tomato soup.
I'm hoping someone has some brilliant ideas. I know nuts are an easy answer, but I've read on here that they inhibit weight loss so I'm hesitant to eat them in quantity.
What about actual coconut? I buy organic unsweetened coconut chips and add them to a trail mix of raw nuts and dried cranberries.
I would also add butter if you can. I know you are using ghee, but I find butter pretty easy to eat/add to just about anything.
Coconut milk in coffee (it's lovely) or straight up, ghee or butter by the tablespoon, macadamia nuts (probably the best nut 'choice'), avocado as a snack, dark chocolate if it's available...

Also: Canned sardines, which are more of a protein but have decent fat content (make sure to check label for paleo friendliness).

Olive oil shots. Get some.
I have similar issues maintaining a sufficient fat intake as I'm in the military and have a constant battle with CW based food options. I get certain food stuffs mailed to camp, such as fatty cuts of billtong, nuts and buy whole cream. It's not perfect but it's a better option than deep fat fried food and lots of grains.
I was hungry a lot when I first went on paleo, but it went away after a few months. During that time, I craved fat, but then after a while, both the hunger and the fat craving went mostly away. I still eat fat, but I don't crave it like I did for a while there. I suspect my body needed rebalancing and time to adjust. Perhaps the fat gave me something I was lacking and now my body has finally gotten enough to satisfy it.
Might want to exchange tuna for more fatty (anchovies, salmon) fishes.
Diary fat ? Heavy cream, butter, mascarpone, sour cream, ...
As for coconut, try locating (or Ebay) Renuka's coconut cream. It tastes SO MUCH better than coconut oil itself.
