I just made some Coconut Oil bark. Coconut Oil + raw Carob powder + little bit of Stevia + pinch salt and mixed in unsweetened coconut flakes. Came out GREAT-- a bit too great ate half of it. Now i feel energized! I mean really energized/high--had to eat some protein to even out my high. But STILL am feeling pumped up. Is it the coconut oil?

@Bree no real recipe-- I melted some coconut oil--prob close to .75-1 cup, added a tbsp at a time of carob powder ( I think a total of 3 tbsp--but I LOVE carob-- you can use Cocoa powder too) mixed in the salt and liquid stevia. Of course tasted it on the way -- once got to my lik'g then stirred in the unsweetened coconut flakes-- this is also based on your taste--more/less depends on how crunchy you want the end result. Once mixed I put in freezer/frig for about 30- 1 hour. Then broke off HUGE chuncks and ate until I was HIGH :) – KL Feb 24 2011 at 19:42

i've also tried this with crushed macademia nuts! just sayin... ;)

Yes you can pretty much put anything u want in it-nuts, seeds- if you eat dried fruit can throw that in too. I was trying to keep it as close to paleo as I could. – KL Feb 24 2011 at 20:22

I get the same effect eating coconut butter (YUM)- a surge of energy and warmth (I used to tend to run cold and this really has helped warm me up considerably).... This sounds pretty yummy too... might just give it a try.

So what do you think it is from -- the fat in the oil or carbs in the flaked coconut/carob? I am still feel'n it! YipppEEEEE!! – KL Feb 24 2011 at 20:21
Most likely the fat- it's a medium chain saturated fat- from my understanding the body has this neat setup in your small intestine where many short and medium chain saturated fats can be directly absorbed without having to go through all the additional steps of emulsification and breakdown- this makes them a pretty good source of relatively quick energy. Yup. I sometimes eat a big spoonful when I am feeling run down and it gives me a boost, even occasionally pushing me into uncomfortable near-mania territory (so I tread lightly with it in the evening especially.) It's so hard to sort through claims about coconut oil (while I love it and notice it impacts my health in a variety of positive ways, I refuse to believe it is a mystical magical cure-all magic bullet as some like to purport), but many say it is a thyroid stimulator which could account for the increased energy, body temp, and other things that I (who has an under active thyroid) and others report. If anyone knows any more about that I'd love to hear...

The first time I made coconut bark(without carob) ,I took my first bite and thought,yuck, what a greasy tasteless thing> But of course I became addicted to the stuff.. Love it..
