So regardless of whether or not this is fully "paleo", I wanted to post it here for everyone incase you are just itchin to have panckaes and don't want the gluten/carbs to go along with it.

Admittedly, this recipe was kind of 'stolen' from a recent post by Chris Masterjohn (slightly modified), but since I have had excellent results, I really feel that I would be doing a great injustice by not sharing my experience.

Ingredients: makes 5-6 four inch pancakes

  • 3 eggs

  • 3 tbsp heavy cream (or any milky product)

  • 2 tsp pure vanilla

  • 1/8 tsp pure stevia powder (or sweetener of choice to replace 2 tsp sugar)

  • 1/8 tsp baking powder

  • 3 tbsp sifted coconut flour

  • 3 tbsp ghee (coconut oil or butter will work)

Optionals:

  • a pinch of cinnamon

  • fresh fruits: blueberries/strawberries/bananas

Directions:

Mix eggs, ghee, vanilla, cream, stevia, cinnamon in a mixing bowl. Mix coconut flour and baking powder separately, then add to the main mix and stir everything together. Add ghee or coconut oil to skillet over medium heat. Pour 4 inch dollops of batter into pan and make sure the batter is flattened out a bit. If you will add fruit, add it now and push it into the batter. Cook on each side for about 5 minutes or until center is not soggy. Note that the ghee/coconut oil in the pan is what helps them get golden and crispy. Letting the pancakes sit in a dry pan doesn't seem to work quite as well.

Here are some pics I snapped for you. Don't freak about the fruit! I have made them without fruit and they taste awesome that way as well. But this is only 3 strawberries, 1 small banana, and a handful of blueberries spread across the entire batch. And of course, adding a couple spoons of pasture butter and a wee drizzle of pure maple syrup helps out a bit.

I'm gonna make us this tomorrow :D could I substitute the stevia (can't get hold of it in time) for like mayple syrup? Also could I pound desicated coconut to make coconut flour? – Carly Mar 7 2011 at 9:34

these look great! i have "pancakes" once a month or so with the kiddos, but have yet to find a recipe i really like. these look nice and crispy around the edges like "real" pancakes. ill put this on the list for my next go.

i did make a paleo dutch baby oven pancake once that was really good! LOTS of butter in the cast iron pan, then mixed 4 eggs, 1/4c coconut flour, vanilla, a small pinch of baking powder, cinnamon and about 1/4c coconut milk (or heavy cream). pour in a hot cast iron skillet with about 6tbs butter melted in it and put in a 425 oven for about ten minutes. it puffs up and browns nicely, and is awesome with blueberries and a smakerel of maple syrup. and, more butter.

i dont do the candy cigarette thing too often, but its nice to have a few fun recipes under ones belt! thanks!

sounds like Masterjohn recipe. Me I have no want for a pancake. I would be concerned about the coconut flour processing. I would pass but I am sure someone here will love the replacement value.

3 tbsp of coconut flour? that's only a half tbsp per pancake. how much could it really hurt? it's very different from regular flour, where it takes much more and has all kinds of anti-nutrients in the grains. – Jack Kronk Feb 27 2011 at 19:30
