My wife's family just came back from france and brought me 8 quarts of Rillettes! If I had to choose one thing to eat for the rest of my life, i think this would be it. Seems really easy to make too. Think, something like pulled pork, mixed with lots of fat, stored in a jar and covered with 1/2 an inch of fat to preserve it. heaven!

I love rillettes too. I was in Paris in 2009 for my 21st birthday and every meal I had consisted mainly of either steak / salmon tartare or rillettes. We decided to stay at the hotel one evening and ended up just buying four big cans of rillettes and eating them with spoons in front of the television. As joey said, Paleo ice cream indeed! I'd love to try making it myself but I'd want to find some top quality pork first. |
