I'm having some co-workers over for a Christmas party and none of them are paleo. I need some ideas for some good paleo finger foods. I'm thinking deviled eggs, meatballs, some veggies...What are your favorites?
Flax seed pizza crust with your choice of topping cut into small squares
Jalapeno peppers cut in half and stuffed with chicken and baked
HB eggs stuffed with guacamole
Endive with your fav chicken salad recipe
Bacon wrapped fresh pineapple baked till crispy
Grilled veges on a rosemary skewer
seasoned nut mix
Almond-stuffed (or pecan-stuffed) dates. Example here.
Stuffed mushrooms (these with bacon and crab filling)
Sliced cheese platter (Kerrygold has some good hard cheeses, available in bulk-sized blocks at Sam's Club or Costco)
I know strict Paleos aren't into the Paleo baking, but this is a pretty basic recipe and everyone I've made them for loved them. Paleo or not. I added pecans and cinnamon to taste in some of the batches or dark chocolate chips.
* 2 cups Almond Butter * 1 1/2 cups Canned Pumpkin * 2 egg * 2/3 cup Honey * 2 tsp Baking Soda
Combine all ingredients in a bowl. Mix well. Pour into a greased 9 x 13 pan. Bake at 350 for 25 minutes or until a toothpick inserted comes out clean.
Flank steak done the day before, covered in chimichuri sauce ( olive oil, cilantro, garlic, spices, lime juice) and refrigerated. Cut into strips or squares and skewer with a bamboo cocktail toothpick.
