Had a turkey in my freezer since Jan (before Paleo) and figured I better make it. YUMMMMYYY! I swear I think I just ate half of it! It was organic and not hormones blah blah blah.. So how UnPaleo is it?

I ate so much I think I am actually gobbl'g-- gobble gobble gobble

It's an animal. Why on earth would you consider it un-paleo?

Turkey is paleo but it has an inordinate amount of omega 6 in the fat. Like amounts comparable to corn oil, so I like to make poultry a once a week thing. Still paleo, and numm num nummers.

edit: I was wrong, only about a third of corn oil. Still sub-optimal if eaten too frequently though. Holy shit corn oil is death. One tbs is all the omega 6 I eat in 2 days on a very high fat diet.

It might be unpaleo if it was the kind that's injected with solution, known as a "self-basting" turkey. The solution might have weirdo chemicals in addition to salt.

Turkeys, like geese, do very well on a pasture diet of grass and bugs. If you can find a pasture raised turkey I bet it would have a fantastic ratio of omega 3 and 6 fats. Then again, turkey is pretty lean to begin with, so not sure if the fat profile would have much of an affect on your diet.
