I'm in paleo heaven: I just made pulled pork from a big juicy pork shoulder butt roast (anybody's mouth watering?), and I have a ton of solid and liquid fat and juices left over in the pot. I kind of want to save it and put it to good use, but I have no idea what I would use it for.

Any ideas, hackers?

Thanks!

Refrigerate pan drippings. Take out hardened lard and use as you would any saturated fat. Use the congealed juices for flavoring in a sauce or soup.

Thanks a bunch for the breakdown--this is really helpful. – losterman Mar 11 2011 at 23:53

Use it as you would butter or coconut oil, like in a skillet. Try it with eggs. As long as the porky taste goes with what you're making you can't go wrong.

Thanks! If it were you, would you separate the solids from the liquids and use them in different contexts? – losterman Mar 11 2011 at 23:33

I would not separate them, but that's only because I'm lazy. – Carl_Stawicki Mar 11 2011 at 23:36

Is the pork pastured, if so, eat it with a spoon.

It's great on vegetables, if you eat those. Definitely good to cook your greens in. Turnip greens, pork fat, bone broth, and vinegar, all simmered together for an hour or two is a good combo for me.

That's a Southern delicacy right there. I'm more of a collards girl myself. – L. Sep 11 2011 at 23:55
