Time to self-experiment.
How do you do with other very fatty meat? It could be a problem of not being accustomed to high fat. The remedy for that is increasing your intake gradually.
Or it could be low stomach acid. To test that you could try taking HCl - the capsules, not the tablets. Start with one after a meal, and increase by one with every meal until you feel a mild burning sensation. Then drop back one. Gradually your digestion should improve, and you will feel the burn with fewer capsules. If this isn't the problem, you'll feel the burn with the first attempt.
RG73's suggestion of pork belly would let you know if it is the curing agents that bother you.
Good luck. It would be a shame to have to avoid bacon!
