I was just making some! I decided to use Earth Balance shortening because it has all the delicious PUFAs that commercial bakeries use these days. I really wanted restaurant quality cupcakes. I also used a mixture of healthy agave nectar and organic white sugar. For the icing I used soy milk and Nestle brand asbestos powder.

Do you think red star shaped sprinkles are paleo? I saw Kurt Harris was recommending the blue horsey shaped sprinkles, but Loren Cordain says that only the nonpareil silver balls are paleo. Don't know where the stars fall on that...

Don't forget to squeeze some fat-free Reddi-wip on top or in the middle! ConAgra makes a chocolate version. ;) – gilliebean Apr 2 2010 at 6:03

I start with a typical cupcake recipe:

  • 2 1/4 cups all purpose flour
  • 1 1/3 cups sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 1 cup milk
  • 1 teaspoon vanilla
  • 2 large eggs

and replace all ingredients with home ground grass-fed beef. Top with fresh bacon bit sprinkles.

I think this is called beefcake.

Sorry, but healthy agave nectar are three words that don't go togther. This market-hyped healthy agave is worse than HFCS. Since baking and desserts in general are borderline paleo (and it isn't that bad to stray alittle sometimes, think 80/20), enjoy them using better ingredients like real milk instead of that harmful estrogen filled soy milk. Maybe honey over sugar but not corn syrup of that agave stuff then any sprinkle will do while living in the 20 per cent.

My favorite cupcakes are the ones I don't eat! Ha!

I spent 10 years as a professional cake decorator - even before I went paleo, I didn't eat anything that had the word "cake" in it. Blech. Now pie, on the other hand...I miss pie. If I were to ever bake it and eat it again it would SO have a lard crust. Om nom nom nom nom...

Perhaps little Mark Sisson/Grok shaped sprinkles? You could make them completely out of almond butter, coconut flour and a little mashed banana...

Japanese purple sweet potato (purple flesh). Bake in skin. Refrigerate. Make some sort of honey glaze. Drizzle on top. Amazing.
