BF and I just started on paleo and I'd like to vary what we're eating up a bit. Unfortunately I think our meat will mostly be sourced from the super market. We have some farms around us but they only butcher in the late spring (May) and fall (October) and for lack of a deep freeze, we can't keep meat around that long in huge quantities.
We're going to check the local "organic" stores to see if they carry meat but I don't have any high hopes. Once the farmers market starts up in May we'll have better luck.
Anyway - being of scottish heritage, I've had kidneys and offal meat before. Weird tasting, but I know its good for you; two questions:
1) Will buying supermarket offal be bad for us? I've seen buckets of chicken livers and I could probably go up to the meat counter and ask the butcher for beef hearts or livers - but do I want to eat factory raised liver?! EW!
2) I know that coconut milk is (supposedly) supposed to be a great meat tenderizer. Not the biggest fan of the offal flavor - kidneys especially - do you think smothering it in coconut and spices would be good? Spicy offal? :)
