I'm a R&D chef working on a Paleo Diet project and the question has come up a few times regarding Gelatin. Is this ok to use in small amounts?
Definitely more than OK, in fact since our paleolithic ancestors seem to have scavenged often, broke down the bones, and boiled them, it would have been a major part of the diet. Some people argue that it might even be an essential part of the diet. I consume it as part of gelatinous broth daily and also sometimes make desserts with organic gelatin.

I see this is an older post, but I am about to purchase some Great Lakes gelatin to use as a protein supplement. I have no idea which to get. There is a red and green canister; one being hydrolyzed. Also, Kosher or not??? I just want a protein source. I use to use egg white powder, but I think gelatin may be best for me at this point. I really need help in deciding, and soon! Thanks~
I found an easy crock pot bone broth recipe and making it next weekend. What I need is a good protein for a meal replacement. I used to graze throughout the day after long periods of time without a break teaching. Now I eat differently but again have long days chasing kids around. I can't stand to eat food at 6 AM unless it's my power coffee which seems to be a "new" thing. I've been doing that for years sans the MCT. I'm all over that as soon as it arrives. So back to gelatin...I went through an egg-white powder phase, and I read conflicting info on that, so the gelatin is very appealing.
Green Container- Gelatin Hydrolysate; Kosher, doesn't gel, can be used in smoothies.
Red Container- Beef Gelatin, Kosher, does gel, can be used in gelatin desserts, sauces, etc
Orange(ish) Container- Porcine Gelatin, not Kosher, does gel, can be used in gelatin desserts, sauces, etc
