I had already noticed a suppressed appetite when I started observing the diet strictly, but I've recently been prescribed medication which affects appetite as well. As a result, I find that I'm rarely hungry at all, and then only several hours after I would have normally got the signal sans medication.

Does anyone here have any experience with this sort of interaction? Should I still try and eat some minimum amount, or take advantage of the situation with some intermittent fasting?

So your hunger is returning in the afternoon and evening? The medication effects are wearing off? If that's the case then perhaps IF is a good way to approach the situation.

I normally say to people "ride the wave" regarding a lack of hunger especially when starting out but in this case your hunger is being blunted artificially so I'm not sure that's sage advise. How long will you need to be on the meds? If this is a long term venture then I would think paying attention to hitting some minimal marks would be a good idea.

I've always felt that ignoring hunger signals leads to a greater degree of muscular catabolism and that those urges are based on nutrient desires that the body may have. I don't have any evidence of this, but it's always made sense to me. As such, taking advantage of this to to great an extent may have deleterious effects on your health, whether you lose fat or not.

Were I you, I would just map out a diet based on various nutrient densities/caloric values and eat it at predetermined times.

I too was prescribed a medication that supresses appetite for migraines prior to starting on Paleo. Seemingly, I was feeding 24/7 on strict paleo and I was starving in the beginning stages, even though I eat rather clean on a regular basis, but then that quickly phased out.

However, I am a ballet instuctor by profession and juxtapose Crossfit 3-5 xs a week so the need for the additional nutrition is necessary. It is very dependent on your level of activity on a daily basis. Take that into consideration. Be well, and good luck!
