I don't understand how anyone doing grass-fed paleo can get enough fat in their diet? I just had a couple of pork belly cuts arrive and they are so lean. I couldn't imagine getting 200 grams of fat from grass-fed meat. Any suggestions?

Sounds like the farm is sending the pigs to slaughter while they are young and lean, as is industry practice (200lb as opposed to 300+). Keep looking around, you'll find a farmer who'll raise them to a proper weight. – Alex Apr 1 2011 at 13:06

1. Grab a spoon. (A fork will do in a pinch) 2. Open jar of coconut oil or grab the butter dish. 3. Scoop chosen fat onto selected implement. 4. Shovel fatty goodness into mouth 5. Taste, savor, swallow (should that be 3 steps?) 6. Repeat as necessary. – Dave S. Apr 1 2011 at 13:08

I buy 75% lean grass-fed ground beef and burgers from US wellness. deliciously fatty.

Me too. I don't waste my time with the leaner ground beef. Plus the fattier, the cheaper. – ROB Apr 1 2011 at 15:17

Cook it in a half and half mix of butter and coconut oil.

This fixes everything!

The cut of pork and the breed of pig make a difference. For instance, the Mangalitsa pig is supposed to be pretty fatty.

You can also add all the fat you want when you cook the meat.

We're planning on getting some grass fed beef next week (going to get a freezer this weekend, woohoo!) If it isn't fatty enough, you can always cook in butter, coconut milk, ghee. There's a lot of options :)

Our local butcher sells grass finished beef. I asked him about their pork once, he said he does not grass feed the hogs, they are lean enough already, he said it would make their fat levels too low. Maybe this is what you are seeing?

if you can tolerate dairy, then your name says it all.
