If I didn't already have an Auberins PID controller hooked up to a rice cooker, I'd buy an SVS in a heartbeat, simply because it's in one compact package. My setup works great, but the tangle of cables is decidedly inelegant.
I love slow-cooked food but don't really see why I should invest into an expensive machine when my good old crockpot gives me excellent results. And the idea of having to buy specially manufactured plastic bags to cook in puts me right off.
Thanks to a bonus check from work, my SVS was delivered late last week.
I haven't done as much as I'd like with it yet, but so far so good. With the schedule that my husband and I have it works out well - it saves dirty dishes and direct kitchen time, for sure.
I got home the other day and put in chicken breasts. We went out for a couple of hours and when we got back, they were perfect after a sear. I did a roast another day where it went in in the morning and was finished by dinnertime.
I also have a crockpot that I use quite a lot, but there are different things I would cook in each, so I'm still happy I took the plunge on a sous vide.
Going to try steak for the first time it in tonight - guess that will be the true test!
Best of luck with your decision. I've heard a lot of people say that as they get more common the price should drop. I bet microwaves were really expensive when they were new too. :)
