In my last order of grassfed ground beef, I asked for the organs, too. To my surprise they included the bull testicles. Why haven't I seen any posts or recipes for Rocky Mountain Oysters on any paleo blogs? Actually there aren't many recipes at all floating around the internet ~ they were all basically the same deep fried recipe. So I made some today and ate them with a bit of Cholula hot sauce:
Three out of five in my family actually liked them. Hubby wasn't amused that I duped him, though. Bwa haha haha!
Anyone else have a different way of fixin these big guys up?
i'd like to try them sometimes, but im slightly grossed out. the scene in Apocalypto where the chubby guy eats raw pig testes.... yuck haha. i'll ask my local grass fed beef farm if they have them for sale though. sounds interesting, and i've become pretty daring since going paleo. =)
They are a delicacy all over south Asia - although goat is the preferred animal.
They are generally cooked over a skillet, with butter/tallow, salt, pepper, cumin powder, coriander powder, a little tomato puree and cayenne. Can get a bit too spicy this way, but delicious nevertheless.
I haven't thought to ask my butcher, who raises and sells bison meat, if I could get bison testicles. However, they are not part of the offal from our grass-fed beef, since steers have been divested of theirs.
Ha! We call 'em calf fries in Texas. They are delicacies in fairs and rodeos. I've only had them deep fried, and they were a little chewy, but actually pretty delicious! i'm going to try the paleo batter and fry these things in some bacon grease i've been saving up, then see if the wife likes them (I'll have to tell a little white lie, of course) I know already I'll like them. Hard part is finding them...
