In my last order of grassfed ground beef, I asked for the organs, too. To my surprise they included the bull testicles. Why haven't I seen any posts or recipes for Rocky Mountain Oysters on any paleo blogs? Actually there aren't many recipes at all floating around the internet ~ they were all basically the same deep fried recipe. So I made some today and ate them with a bit of Cholula hot sauce:

Three out of five in my family actually liked them. Hubby wasn't amused that I duped him, though. Bwa haha haha!

Anyone else have a different way of fixin these big guys up?

You're liable to get a "Rocky Mountain High". – Dave S. Apr 7 2011 at 12:40
What a load of bull... – Futureboy Jun 7 2011 at 21:06

I've eaten bison testicles on several occasions and they are always good. After removing the skins, I just slice them thin and do a simple pan fry with salt, pepper and some curry seasoning.

well that would have been simpler. :-) Thanks – W8liftinmom Apr 7 2011 at 5:37

So what did you crumb and season them in?

I blended almond, coconut and a bit of rice flour together and seasoned with garlic powder – W8liftinmom Apr 8 2011 at 16:48

i'd like to try them sometimes, but im slightly grossed out. the scene in Apocalypto where the chubby guy eats raw pig testes.... yuck haha. i'll ask my local grass fed beef farm if they have them for sale though. sounds interesting, and i've become pretty daring since going paleo. =)

gross. i don't want to eat anything's testicles. same reason that i don't want to eat a tarantula, or a beetle, or a big worm. i just don't mess around with stuff like this.

instead, i just grill up a delicious steak, slam some pasture butter on there and call it a day.

Grilled Tarantula is DELICIOUS! Don't knock it until you've tried it. – Marie Jun 7 2011 at 23:44

ah, balls, it's all mental. i think of it as caviar.

these look way too over-fried, looks like KFC chicken. i fry them very rare. got no balls to eat them raw yet.

the recipe called for par-broiling them first. Not sure if it's really necessary, but they didn't taste overdone. – W8liftinmom Apr 8 2011 at 16:47

I haven't thought to ask my butcher, who raises and sells bison meat, if I could get bison testicles. However, they are not part of the offal from our grass-fed beef, since steers have been divested of theirs.

They are a delicacy all over south Asia - although goat is the preferred animal. They are generally cooked over a skillet, with butter/tallow, salt, pepper, cumin powder, coriander powder, a little tomato puree and cayenne. Can get a bit too spicy this way, but delicious nevertheless.

Ha! We call 'em calf fries in Texas. They are delicacies in fairs and rodeos. I've only had them deep fried, and they were a little chewy, but actually pretty delicious! i'm going to try the paleo batter and fry these things in some bacon grease i've been saving up, then see if the wife likes them (I'll have to tell a little white lie, of course) I know already I'll like them. Hard part is finding them...

Mine weren't calamari chewy. They were almost the texture of scallops. Could probably get away with calling them that. ;-) I used a coconut/rice flour blend as well as almond meal for the coating. – W8liftinmom Jun 8 2011 at 5:28
