Does anyone have data on the carnosine, carnitine, and choline content of - beef liver - beef heart - beef - chicken breast - chicken liver - chicken heart

I'd look on nutritiondata.com, but they don't have nutrition facts on these nutrients. Maybe this data could be in a research publication PDF somewhere? I tried e-mailing the Virginia meat packer's assoc. but no response.

From here, in "raw beef meat, reported carnosine concentrations range from 10 to 20 µmol/g", so it's about 2.3 - 4.6 mg of carnosine per g of beef, and thus there's a gram or two of carnosine per pound of beef.

Cooking can reduce carnosine levels: "in stewed red meat, decrease in carnosine concentration by up to 30% has been reported" (from article cited above).
