What does good grass-fed butter taste like? I bought some grass-fed for the first time (Pastureland unsalted) and it has a flavor I can't stomach. Should it taste strongly of grass? It's a very cowy flavor.

grass fed butter shouldn't have a "barnyard" taste necessarily. If you are buying raw milk or butter that has been hand milked instead of machine milked, it may have a barnyard taste. Machine milking is not a big deal if the cows are pastured. Our VERY VERY small operation farmer got a mechanical aid to milk his cows for a few reasons, but these cows and milk are as healthy as any. Maybe you should just try a different brand if you don't like that flavor. Grass fed butter does not have a particular flavor per se, and can taste very different at different times of the year, depending on whether they're eating young spring grass or winter hay etc. None of these times of year should give a "barnyard" flavor per se, that depends more on milking method. Excellent brands include Kerrygold and Organic Valley Pastured Butter. You may notice a greater richness to the fat, a different texture or sometimes a deeper yellow color (though not necessarily a color difference). You can get Kerrygold (at least the salted stuff) at Costco. |

Kerrygold tastes like... butter. I don't notice a difference in taste between grass and not-grass butter. "Cowy" = snort. Butter shouldn't taste/smell of Brettanomyces, the critter that gives wine that stinky cowflop nose. |

Marrow fat tastes mildly grassy, its a very nice flavor, not too strong, goes nicely with salads and greens with a dash of fresh leamon. Much better than lard IMO. But i have never tasted butter that tastes grassy or like cow. |

I recently purchased some Organic unsalted butter, and compared to regular butter (which I would gladly eat plain) I cannot stand the flavor. It's just.. horribly plain and somewhat chemically tasting. Though, I think that's just the lack of salt. |

I just bought some grass-fed heavy cream from Whole Foods and made my own butter this weekend! It seems to have a lighter butter-flavor, but its super smooth and I can add herbs or salt or garlic to enhance it. Easy peasy, quick, and fun! |
